Discover an unconventional take on a classic Irish style of whiskey. Our Single Pot Still is crafted using a uniquely Irish mash bill consisting of malted and unmalted barley, paying homage to a famous Dublin style while forging a new path in the Single Pot Still category.
The first whiskey distilled in Dublin in nearly 50 years from small batch, hand selected barrels featuring our founder's signature on the pack. We've matured in American Virgin Oak (25%), Bourbon (50%), & Sherry Casks (25%) and bottled at 46% with no chill filtration which completes this whiskey of true character.
TASTING NOTES
The nose emits notes of hibiscus flowers, honeycomb, white grape flesh, grapefruit & citrus. The palate has hints of lychee, more white grape notes along with white pepper, warm, roasted peaches and baked biscuits. This is all wrapped up with a dry finish, with hints of spice, roasted almonds and maple sugar lingering in the mouth.
